Sinigang na Baboy
Sour tamarind pork soup, the Filipino answer to a cold day or a hangover. The broth should make you wince slightly - that is the point.

Method

Put the pork, onion and tomatoes in a large pot with the water. Bring to a boil.

Skim off the grey foam that rises in the first 10 minutes, or the broth will stay cloudy.

Lower the heat and simmer for 45 minutes until the pork is properly tender.

Add the radish and cook 5 minutes, then the string beans and cook 3 minutes more.

Stir in the tamarind base and the fish sauce. Taste - it should be clearly sour before anything else.

Drop in the chillies and the water spinach and turn off the heat immediately; the leaves wilt in the residual heat.

Serve very hot with rice and a small dish of fish sauce for dipping the pork.
