Method

Saute the garlic and onion in oil until soft, then add the chicken and cook 5 minutes.

Add the shrimp and cook just until pink, then scoop everything out and set aside.

Pour the stock into the same pan with the soy and oyster sauce and bring to a boil.

Add the carrot and the thick parts of the cabbage and cook 2 minutes.

Add the dry noodles straight into the simmering stock. Keep turning them with tongs as they soften and drink up the liquid, about 5 minutes.

When almost all the stock is absorbed, fold the meat, shrimp, snow peas and remaining cabbage back through.

Serve on a big platter with calamansi halves - the squeeze of citrus at the table is what makes it.
